Summary: | PROBLEM TO BE SOLVED: To provide a method for producing ATP-holding micronized fish having gel-formative ability and causing no cold denaturation for a long term by conducting no bleach with water, and using no additive such as a freeze denaturation-preventive agent; to provide additive-free micronized fish or additive-free frozen micronized fish obtained by the method; and to provide a paste produced from the micronized fish. SOLUTION: The method for producing micronized fish includes adding ATP aqueous solution (pH-7.0) while micronizing ATP-lost fish with a micronizing means. Another version of the method for producing ATP-holding micronized fish includes micronizing fish richly containing ATP in a short time. COPYRIGHT: (C)2010,JPO&INPIT |
