Summary: | PROBLEM TO BE SOLVED: To provide a high protein gel-like food mixed with edible oil and fat and/or meat, and retaining in gel, oil and fat derived from mixed edible oil and fat and/or meat without being isolated, in spite of subjecting to high temperature treatment. SOLUTION: The high protein gel-like food mixed with edible oil and fat and/or meat is mixed with processed liquid albumen which is obtained by lactic-fermenting processed liquid albumen composed of an oil-in-water emulsified product mixed with 2-8% of albumen protein and 5-20% of edible oil and fat, and having a viscosity of ≥800 mPa s (initial temperature 10°C), pH 3.8-4.5, and an average particle diameter of ≤40 μm.
