PROBLEM TO BE SOLVED: To provide a mill and a method for rolling a noodle strip, giving the noodle strip rolled through a pair of rolling rolls higher-density and lower-density portions in material density unevenly and giving the noodle strip such palate feeling as to be so-called hand-kneadedly rolled. SOLUTION: The mill 1 for rolling the noodle strip for passing the noodle strip B through the path between the pair of the rolling rolls is provided with a roll-driving section 10 by rotating the pair of the rolling rolls 11 and 13 to pass the noodle strip B through the path between them, a roll spacing-adjusting section 20 working in such a way that at least one of the pair of rolling rolls 11 and 13 is subjected to such a reciprocating motion as to be set close to/apart from the other to adjust the spacing G between the pair of rolling rolls 11 and 13, and a roll control section 30 working in such a way that the roll spacing-adjusting section 20 is subjected to asynchronous control for the respective rotations of the pair of rolling rolls 11 and 13 so that the spacing G is widened/narrowed at random during the noodle strip B's passage.
