Summary: | PROBLEM TO BE SOLVED: To provide a method for preparing a soybean protein concentrate from defatted soybean flakes. SOLUTION: This soybean protein concentrate and a method for producing the same having 67 to 72% protein content from the defatted soybean flakes by adopting the processes of exuding, drying, pulverizing and sieving are provided. Thereby, the smell of the bean decreases to 50%, the contents of raffinose and stachyose decrease to 90 to 96%, lipoxygenase activity diminishes and urease activity and trypsin inhibitor activity become negligibly small.
