PROBLEM TO BE SOLVED: To provide an eggshell cracking method solving the following conventional problem: it is hard to focus the laser beam on the eggshell of each of eggs having individual difference by conventional technique comprising supporting both ends of the egg to rotate the egg when cutting the eggshell with laser beams results in generating peculiar smell because the laser beams reach the albumen inside the eggshell when increasing the output of the laser beam, and causing quality deterioration or scorch. SOLUTION: The eggshell cracking method comprises supporting the body periphery of an egg 1 in a drilled hole 6 on a freely rotatable egg receiving plate 5 where the hole 6 is drilled so as to support the periphery of the egg 1 in a standing posture while projecting the blunt end of the egg, applying laser beams to the eggshell projected from the lower side of the bottom part of the drilled hole 6 of the egg receiving plate, making a cut groove 15 formed while leaving the eggshell membrane as it is on the eggshell, and then inserting a blade member 10 into the cut groove to divide the eggshell into two.
