Summary:PROBLEM TO BE SOLVED: To provide a method and mold for producing Tokyo-style sushi rice, enjoyed by anybody readily, capable of producing the sushi rice with a feeling of having voids among cooked rice grains, which was an object of a sushi-artisan apprentice of old days, in a general household, diner, restaurant, etc., several pieces at a short time with a simple method. SOLUTION: This method for producing the Tokyo-style sushi rice is provided by preparing a 3-piece mold consisting of a sushi-pressing plate 1, a drum frame and a bottom plate 2, separating the drum plate into two, mounting mole rods between them so as to make hollow holes, laying cooked rice on the drum frame, pressing with the pressing plate, releasing a set, removing mole rods 2s and lightly grip the cooked rice. Thereby, it is possible to make the sushi rice having the feeling of voids among the cooked rice grains directly. COPYRIGHT: (C)2005,JPO&NCIPI
