Summary: | PROBLEM TO BE SOLVED: To provide antimicrobial substances having high heat resistance and wide pH stability, effective to putrefactive bacteria of foods and causative bacteria of infectious diseases in oral cavity, capable of improving qualities of foods, utilized also for oral care products, effective to putrefactive bacteria of foods and oral care products and obtained from a new bacterium. SOLUTION: The present invention provides the new bacterium belonging to Lactococcus lactis deposited as an accession number of FERM P-18996, antibacterial substances which the microorganism produces and a cultured product comprising these antimicrobial substances.
