Summary:PROBLEM TO BE SOLVED: To provide a koji mold with the amount of secreted and produced ferrichrysin reduced even to at least ≤1/10 times based on that of a koji mold Aspergillus oryzae RIB40 by utilizing an ornithine-N5-oxygenase gene which is a new gene involved in a ferrichrysin synthesis pathway derived from the koji mold Aspergillus oryzae and to provide a food and liquors with a reduced content of the ferrichrysin produced by utilizing the koji mold and further reduced discoloration derived from the ferrichrysin. SOLUTION: A gene encoding the ornithine-N5-oxygenase is cloned from the koji mold to determine the base sequence thereof. The koji mold is transformed with a DNA containing a partial fragment of the gene to select a strain in which the gene disruption is caused by homologous recombination. Thereby, the koji mold with a remarkably reduced amount of the produced ferrichrysin is created. COPYRIGHT: (C)2004,JPO
