Summary: | PROBLEM TO BE SOLVED: To provide unpolished-rice gruel reduced in collapse of rice grains with the lapse of time, reduced in smell peculiar to marine products when used as ingredients for the gruel, and excellent in flavor. SOLUTION: The unpolished-rice gruel has a porous structure, and is obtained by using a germinated unpolished rice having an absorption of 110-150 mass% as a raw material. The unpolished-rice gruel is reduced in a smell peculiar to the marine products also by adding dried shark fins as a marine product ingredient. The unpolished-rice gruel is suitable for retort rice gruel.
