Summary:PROBLEM TO BE SOLVED: To provide a method for cooling a steamed raw material by which the pressurized and heated raw material discharged from a steaming still is rapidly cooled to a temperature suitable for Koji making (malting) so as to be rapidly transferred to the next Koji-making step, and to provide an apparatus usable therefor. SOLUTION: A static mixer 18 having many distributors is attached to the midway of a pipeline of a transporting pipe 12 for transporting the raw material for brewing after finishing a steaming step by the steaming still 7 to the next Koji-making step. An injecting opening 15 for a liquefied gas is opened at the position from the upstream side to the vicinity of the intermediate part of the static mixer 18, and the liquefied gas is ejected to the steamed raw material from the opening 15 to rapidly cool the raw material for brewing after finishing the steaming step to the temperature suitable for the Koji-making step by rapid mixed phase stream of the steamed raw material and the cooling gas fluid.
