Summary:PROBLEM TO BE SOLVED: To provide a method for producing honey pollen-containing brine-free Chinese noodle, by which highly nutritious and high-quality Chinese needle consisting mainly of wheat flour can be produced through utilizing pollen, thickening polysaccharides, egg-shell calcium, dried whole egg, gluten, salt, enzyme, alcohol and water without using brine. SOLUTION: This honey pollen-containing brine-free Chinese noodle mainly consists of wheat flour, and contains about 2 wt.% of honey pollen, about 0.8 wt.% of thickening polysaccharides, about 0.6 wt.% of dried whole egg, about 0.6 wt.% of egg-shell calcium, about 1 wt.% of gluten, about 1 wt.% of salt as a seasoning and quality improver, about 0.8 wt.% of enzyme as a quality improver, about 7 wt.% of alcohol for improving preservability, and a proper amount of water.
