Summary:PROBLEM TO BE SOLVED: To obtain a preservative for a food excellent in flavor and capable of suppressing putrefaction with thermostable bacteria even when preserved at high temperatures and to provide a method for preserving the food using the preservative. SOLUTION: This preservative for the food comprises glycerol caprate alone or at least two kinds of emulsifying agents selected from the glycerol caprate, diglycerol monopalmitate, diglycerol monomyristate and sucrose palmitate. The method for preserving the food comprises using the preservative.
