SOLUTION: The objective sweetener is a novel N-alkylaspartyl dipeptide ester derivative, for example, N-[N-[3-(3-hydroxy-4-methoxyphenyl)-3- methylbutyl]-L-α-aspartyl]-(S-t-butyl)-L-cysteine-1-methyl ester or the like (including their salt forms) and can be used as a sweetener that has excellent sweet taste. This derivative further can be used as a substance that gives a good sweet taste to drinks and foods and can provide such sweetened food and drink products. |
