Summary: | PROBLEM TO BE SOLVED: To provide an emulsion containing a stable carotenoid that can be used as an aqueous solution of a colorant for food products which enables transparent and stable coloring of aqueous food products, and provide a method for preparing the emulsion and its use as a colorant. SOLUTION: An astaxanthin-containing oil and water are added to and mixed into a solution in which glycerin, a glycerin fatty acid ester and a sucrose fatty acid ester have been dissolved in advance to prepare a water-soluble emulsion containing an astaxanthin-containing oil. The emulsion is used as a colorant for food products that enables transparent and stable coloring of aqueous food products. |
