Summary:PROBLEM TO BE SOLVED: To provide a method for manufacturing MUSENMAI (the rice removed of its bran by grinding with the bran to eliminate the need for rice cleansing with water, the technique originally invented and developed in Japan) which is capable of easily removing the bran remaining in the fine grooves of the surfaces of rice grains without damaging these surfaces and is capable of improving taste by holding the moisture of the rice grains and an apparatus for the same. SOLUTION: The main sections of the process for manufacturing the MUSENMAI comprises a rice milling stage A in which three units of rice milling machines are connected and a MUSENMAI manufacturing stage B having a moisture adding means 9, an agitating and mixing means 10 and a separating means 11. After the moisture is added to polished rice, the polished rice and comminuted rice are mixed and the mixture is agitated to grind the polished rice, by which the bran remaining on the surfaces of the polished rice is peeled and removed and thereafter the polished rice and the comminuted rice are separated.
