Summary:PROBLEM TO BE SOLVED: To provide an aqueous solution and a method for protein extraction, which are capable of extracting protein even from heated food without being denatured, and to provide an analyzing method for allergen. SOLUTION: An aqueous solution for extraction contains an alkyl sulfate, urea, and dithiothreitol or 2-mercaptoethanol in the molar ratios 3.1-52:2000 or more:1.1 or more (in the case of dithiothreitol) or 9-400 (in the case of 2- mercaptoethanol). The extraction is performed in an aqueous extraction system containing 0.09-1.5 wt. % of the alkyl sulfate, 2 M or more of urea, and 1.1 mM or more of dithiothreitol or 9-400 mM of 2-mercaptoethanol. Allergen analysis is carried out for immunologically measuring the allergenition of protein in the obtained extract.
