The machine has longitudinal lanes (7, 17) to feed the moulds (1) containing the curd. Each lane has two sections separated by a rapid overturning station (R), in which the bottom (5) of each mould is seized by a horizontal plate (41) which manoeuvres and supports the moulds vertically in order to lift the mould from the lane and bring the upper edge to meet a stop on the lower lead-in surface of a ring (35) that is part of an oscillating, overturnable framework (32): the lower edge of the overturned and initially empty mould (1), to be filled during the overturning, is brought up to the stop of the corresponding opposite lead-in surface (38) of the same ring and then lowered onto the surface of the relativefeed lane before being removed.
