Summary:Provided are GH10 xylanases or a fragment thereof including modified xlyanase enzymes, all having xylanase activity, wherein the enzyme or fragment thereof provides increased oil recovery from a grain-based material compared with a control or parent GH10 xylanase enzyme, the parent GH10 xylanase having been modified at at least one or more of the following positions 7, 25, 33, 64, 79, 89, 217 and 298, wherein the numbering is based on the amino acid numbering of FveXyn4 (SEQ ID No. 1). Methods of using the GH10 xylanases, for example, for improved oil recovery are also provided.
