Summary:An aerated ice-containing beverage comprises: (a) 0.5 to 6 wt% tea or coffee solids; (b) one or more freezing point suppressants; (c) less than 10 wt% fat; and (d) the balance substantially ice and water. The one or more freezing suppressants are present in an amount sufficient to suppress the melting point of the water by from 0.2 to 3oC. The beverage has an overrun of from 10 to 150% and ice having an average crystal size of from 0.1 to 1mm. For at least 10 minutes after production the beverage does not form a distinct non-foamed or non-ice containing layer. The one or more freezing suppressants may include sucrose. The beverage may be free from gums, thickeners and stabilisers. Additionally disclosed is apparatus for preparing an ice-containing tea or coffee beverage comprising: (i) a source of beverage liquor; (ii) a refrigeration system; (iii) a pump; (iv) a beverage dispensing outlet; and (v) a source of pressurised gas.
