Summary:A synthetic tubular sausage casing, for example of regenerated cellulose, for dry sausage, such as salami and cervelat, is coated on the interior surface with 0.1-5% soluble protein having a molecular weight above 10,000 and an isoelectric point in the range pH2-pH6, such as gelatin or egg albumen, and sufficient liquid smoke in the range 0.05-5% wt. of the casing to substantially insolubilize the protein after drying, whereby the casing will shrink with and adhere to the surface of the dry sausage therein. An insoluble non-toxic powder may be added in small amount to function as an anti-blocking agent.
