Procédé de préparation de 5-hydroxyméthylfurfural (HMF) pur par dégradation thermique d'un saccharide en milieu sensiblement anhydre ou en milieu aqueux, en présence d'un catalyseur acide, caractérisé en ce que ledit catalyseur acide est composé d'un mélange d'un premier sel d'acide minéral ou organique avec un second sel d'acide minéral ou organique d'acidité plus forte.
