Summary:The invention relates to two selected strains of Pediococcus damnosus isolated from white wine produced from the grape variety Caiño blanco, and to a combination of said strains that are able to cause the malolactic fermentation of a product, preferably wine or fruit juice. The invention further relates to a method for the malolactic fermentation of a wine or a fruit juice, and to the use of both one of the strains and the combination of the two strains, in addition to the use of the method, for producing a wine. La presente invención se refiere a dos cepas seleccionadas de Pediococcus damnosus aisladas de vino blanco elaborado a partir de la variedad de uva Caiño blanco, así como una combinación de dichas cepas, capaces de fermentar malolácticamente un producto, preferentemente un vino o un zumo de fruta. Además, también hace referencia a un método para fermentar malolácticamente un vino o un zumo de fruta. Es asimismo objeto de la invención, el uso tanto de una cepa como la combinación de ambas cepas, así como el uso del método, para la fabricación de un vino.
