Summary:The present invention describes a peptide sequence in which a series of amino acids has been substituted by site-directed mutagenesis from the sequence encoding Aspergillus nidulans endoxylanase, in order to obtain an endoxylanase that has greater thermal stability. Furthermore, the present invention relates to the use of this endoxylanase for obtaining the xylan from plant material and to the subsequent use of this xylan in bioethanol production processes.
