Summary:The invention relates to a method of obtaining refrigerated pasteurised citrus juices. The inventive method comprises the following main steps: the juice is centrifuged and two fractions are obtained, namely a serum fraction and a pulp fraction which are each conveyed to a heat exchanger in which they are pasteurised and subsequently refrigerated. The two fractions are stored separately in tanks and subsequently mixed and packed, all under aseptic conditions. The pasteurised fractions can be frozen, in which case they have to be re-pasteurised prior to mixing in order to obtain the end product. In addition, another semi-finished citrus product, such as juice concentrate, juice vesicles, etc. can be added to the end mixture. The inventive method retains the characteristics of the fresh juice.
