The method for automatically controlling the cooking process in a pressure cooker with water pressure below the cover is performed on a heating plate equipped with an electronic control unit, calculating the inclination (DT/Dt) of the temperature's (T) upward curve (1) with time (t). The maximum value (DT/Dt max) (t) registered is used to estimate the load (L) inside the pot, thus determining a cut-off (tc) temperature (T) ideal for interrupting power (W) before reaching the nominal cooking temperature (Tn). Thus, the safety temperature (Tm) is not exceeded due to the effect of the heat inertia to predict the escape of steam during cooking (ts). The (DT/Dt max) value is also used in the adjustment algorithm Pl of nominal temperature (Tn). El método de control automático del proceso de cocción en una olla con vapor de agua bajo la tapa, es realizado sobre una placa calefactora provista de una unidad electrónica de control, siendo calculada la pendiente (DT/Dt) de la curva (1) de subida de la temperatura (T) con el tiempo (t). El valor máximo (DT/Dt max) (t) registrado es usado para estimar la carga (L) dentro de la olla, determinándose con ello un valor de temperatura de corte (Tc) idóneo para la interrupción de la potencia (W), antes de ser alcanzada la temperatura de cocción (Tn) nominal. Así no se rebasa por efecto de la inercia térmica una temperatura de seguridad (Tm), para prevenir el escape de vapor durante la cocción (ts).
