Summary:A process of extracting coffee oil from a coffee-based feedstock using an ester extraction solvent, wherein a mixture of the coffee-based feedstock and the extraction solvent is kept under mechanical or magnetic agitation for at least 30 minutes and subsequently a liquid phase comprising the extraction solvent and the extracted coffee oil is separated. Preferably, the process is conducted at a temperature between 15 and 25℃ at atmospheric pressure under a standard oxygen rich or inert atmosphere. Preferably, the solvent is ethyl acetate and the feedstock is green coffee beans, roast coffee beans or coffee arabica spent grounds. A coffee oil is also claimed wherein the peak area% of components in the composition is: palmitic acid 21-87%; stearic acid 4-21%; oleic acid 4-15%; linoleic acid ≤ 50%; linolenic acid ≤ 2%; arachidic acid 1-8%; behenic acid ≤ 3%. Preferably the coffee oil has: acid value of ≤ 4 mg KOH/g; iodine value of 13-138 g/100g; SAP value 132-192; peroxide value ≤ 5 mEq oxygen/g; caffeine content of 1.5wt%; tocopherol content of 2wt%; and density 0-1 g/mL.
