Summary:Disclosed is a concentrate for making a premix for a frozen confection, wherein the concentrate is in the form of granules. In one embodiment the concentrate comprises saccharides and/or non-saccharide sweeteners in a total amount of from 40 to 90% by weight of the concentrate; protein in an amount of from 1 to 15% by weight of the concentrate; and fat in an amount of from 1 to 25% by weight of the concentrate. In another embodiment the concentrate comprises saccharides and/or non-saccharide sweetener in a total amount of from 70 to 95% by weight of the concentrate; and fat in an amount of from 3 to 25% by weight of the concentrate. In a third alternative embodiment the concentrate comprises protein in an amount of from 10 to 50% by weight of the concentrate; and fat in an amount of from 3 to 25% by weight of the concentrate. In each embodiment the fat comprises emulsified fat droplets.
