Summary: | The invention relates to a foodstuff comprising proteins essentially of vegetable origin capable of being obtained by a process comprising the steps consisting in: (iv) selecting a natural source of vegetable proteins comprising nutrients: (v) extracting a vegetable juice from the natural source of vegetable proteins, said vegetable juice comprising almost all or all of the nutrients contained in the natural source of vegetable proteins; and (vi) treating said vegetable juice from step (ii) with transglutaminase, characterized in that when the natural source of vegetable proteins consists exclusively of soya, said foodstuff also comprises a food ingredient of non-animal origin. |
