Summary: | Use of one or more aromatic neomenthylamide compounds (A) as a flavoring substance or flavoring substance mixture, is claimed. Use of one or more aromatic neomenthylamide compounds (A) of formulae (I) and (Ia) as a flavoring substance or flavoring substance mixture, is claimed. Ar 1>substituted phenyl groups of formula (a) or (b) or heteroaryl group of formula (c); either R 1>, R 2>H, OH, OCH 3, OCH 2CH 3, OCH(CH 3) 2, COOCH 3, COOCH 2CH 3or COOCH(CH 3) 2; or adjacent R 1>R 2>OCH 2O group; and X : O or S. Independent claims are included for: (1) a mixture comprising (A) and aromatic neomenthylamide compounds (B) of formula (II), (IIa), (III), (IIIa), (IV) and/or (IVa), with the proviso that the mixture excludes a mixture of benzoyl-d-neomenthylamine and benzoyl-1-menthylamine, or benzoyl-d-neomenthylamine and benzoyl-d-isomenthylamine; (2) a composition, in particular a composition suitable for consumption, comprising (A) or the mixture, and one or more further constituents suitable for consumption; (3) a ready-to-eat preparation or semi-finished product comprising (A), the mixture or the composition; and (4) a method for producing, imparting, modifying or intensifying a flavor, in particular an umami flavor, in the ready-to-use or ready-to-eat preparation or semi-finished product, including: mixing (A), the mixture or the composition with one or more further constituents of the ready-to-eat or ready-to-use preparation or the semi-finished product; or applying (A), the mixture or the composition to one or more further constituents of the ready-to-eat or ready-to-use preparation or the semi-finished product; or embedding (A), the mixture or the composition in an enveloping or matrix material.
