Summary: | The process for treating an alimentary liquid e.g. orange juice using a gaseous mixture e.g. hydrogen, comprises injecting the mixture in the liquid to reduce a redox potential thus avoiding the phenomenon of foaming, and contacting the liquid and the gaseous mixture in a column, which is traversed by each of two fluids. The liquid and the gaseous mixture traverse the column with counter-current. The column is an empty structure of any material and then the liquid/gas exchange is carried out on a droplet surface of the liquid falling in the column. The process for treating an alimentary liquid e.g. orange juice using a gaseous mixture e.g. hydrogen, comprises injecting the mixture in the liquid to reduce a redox potential thus avoiding the phenomenon of foaming, and contacting the liquid and the gaseous mixture in a column, which is traversed by each of two fluids. The liquid and the gaseous mixture traverse the column with counter-current. The column is an empty structure of any material and then the liquid/gas exchange is carried out on a droplet surface of the liquid falling in the column, or the column is partially filled of structured or disordered garnish material, and then liquid/gas exchange is carried out within the garnish material. The value of redox potential after the treatment is higher than 100 mV to the initial value of the liquid.
