A control measuring central or computer (13) is arranged in parallel to the resistance, and the generator provides electric current passing across an organic material (9) and the culture medium when the tool is in contact with the material. L'invention concerne un dispositif, un système et un procédé, le dispositif étant un dispositif de coupe de matière organique (9), notamment de champignons, poussant dans un milieu de culture (8), comprenant un outil de coupe (2), caractérisé en ce qu'il comprend des moyens (2, 10, 11, 13, 14) de détermination de la distance (H) entre l'outil de coupe (2) et le milieu de culture (8).
