Process for preparing 2-amino-3-hydroxy acids

The invention provides a process for preparing 2-amino-3-hydroxy acids. The process comprises mixing an aldehyde, and glycine with Escherichia coli serine hydroxymethyltransferase in the presence of pyridoxal 5'-phosphate to form the corresponding L-erythro-2-amino-3-hydroxy acid.
