Summary: | Disclosed is a process for producing erythritol by cultivating microorganisms under aerobic conditions. An appropriate concentration of dissolved oxygen (i.e.: not less than 0,2 p.p.m.) is monitored. By means of a cell separating device (5) a clarified liquid is continuously withdrawn from the fermentation tank (1), whereas a limited fraction of the cells is allowed to bleed out of the fermentation system. The cell separator (5) may be arranged in an external loop or inside the fermentation tank (1). The process is monitored so as to maintain the cell concentration in the fermentation tank between 40 and 200 g/l (dry weight). The erythritol is recovered from said clarified liquid. |
