DEVICE FOR CONTROLLING THE STEAM IN A STEAM-PROOFING APPARATUS

In order to achieve sensitive control of the steam output of a steam generator, an outlet aperture (5) is provided in the wall of the baking oven which leads to a sleeve (8) carrying the temperature sensor (9). The sleeve (8) with the temperature sensor (9) is exposed to a stream of forced air.
