Summary: | A pyruvate oxidase having high thermal stability, being stable at a pH of 7.0 for 10 minutes at a temperature of up to 45 DEG C, can be obtained by culturing a strain of bacteria of the genus Lactobacillus which has pyruvate oxidase activity, such as Lactobacillus sp.
