Summary: | Tea leaves, roasted coffee beans, roasted beans or roasted cereals are extracted by a cyclic-dextrin-containing liquid and/or this extract is dried in order to obtain an instant beverage. Valuable constituents of tea leaves, roasted coffee beans or the like are extracted by the cyclic-dextrin-containing liquid by this process and extracted soluble and aromatic constituents are effectively protected by the cyclic dextrin when the extract is dried to form an instant beverage. The resulting instant beverage, such as instant tea or instant coffee, has an excellent aroma. |
