Summary:Water and beverages are carbonated by liq. CO2 under conditions in the liq. which promote the transformation of the liq. CO2 into the gaseous phase. The CO2 is injected in precisely metered volumetric ratios into the liq. which has a lower pressure than the critical value or which has a temp. above the critical value. Most CO2 is dissolved; the rest (only significant at high desired CO2 concns) is dissolved in the subsequent absorption chamber.
