Summary: | In removal of pectin from extracted data juice, and filtration, without use of pectin-splitting agents or filter aids, the juice is filtered in one stage, at 0.1-1 MPa and 30-70 deg.C, in an appts. comprising ultra-filtration membranes of different materials and with cut-off limits of 5,000-50,000 Daltons, depending on the pre-treatment. Dimensioned tubes or capillaries are pref. used as the membranes, and ultrafiltration is pref. periodic and/or continuous or in one stage or cascades, according to the requirements of the complete date processing line. ADVANTAGE - Use of pectin-splitting enzymes or lime is avoided. The permeate is free from pectin and very clear, and the pectin-rich (3-5%) concentrate can be recyled or processed. |
