Summary: | Disclosed is a method of inhibiting a lowering in endoglucanase activity in the presence of a surfactant characterized by comprising modifying a protein having the endoglucanase activity and carrying no pyroglutamic acid at the N-end into another protein carrying pyroglutamic acid at the N-end. In addition, disclosed are a protein having endoglucanase activity and having been modified into pyroglutamic acid at the N-end by amino acid modification; a polynucleotide encoding the above protein; an expression vector containing the above polynucleotide; a host cell transformed by the above expression vector; and a process for producing the above protein by culturing the above host cell. |
