Summary: | Provided is a novel method with which it is possible to efficiently produce a beverage to which a mellow flavor is imparted without requiring a complicated process or a special device. The beverage is characterized by containing a substance obtained by heating 0.3-440 ppm of L-ergothioneine under conditions satisfying the range of formula (1) Y > = 34 * (X-60)-1.1 (X is the heating temperature (DEG C), Y is the heating time (minute), and 61 < = X < = 150). And the pH value of the beverage is 5.0-7.5.
