Summary:The invention discloses a preparation method of goose carnosine based on an in-vitro whole enzyme method. The preparation method comprises the following steps: (1) generating adenosylmethionine from a substrate L-methionine under the catalysis of methionine adenosine transferase; (2) generating carnosine from the substrates of L-histidine and beta-alanine under the catalysis of carnosine hydrolase; and (3) synthesizing the carnosine and ademetionine together under the catalysis of the goose carnosine synthase to obtain the goose carnosine. According to the method, an in-vitro whole enzyme method is adopted, synthesis of the goose carnosine can be achieved by adding three amino acids, degradation of microbial cells to the goose carnosine is avoided, and then the yield of the goose carnosine is increased. 本发明公开了一种基于体外全酶法的鹅肌肽制备方法,(1)底物L-甲硫氨酸在甲硫氨酸腺苷基转移酶的催化下生成腺苷蛋氨酸;(2)底物L-组氨酸和β-丙氨酸在肌肽水解酶催化下生成肌肽;(3)肌肽和腺苷蛋氨酸一起在鹅肌肽合酶催化下合成鹅肌肽。本发明采用体外全酶法,通过添加三种氨基酸即可实现鹅肌肽的合成,而且还避免了微生物细胞对鹅肌肽的降解,进而提高鹅肌肽的收率。
