Summary: | The present invention relates to an improved process for the production of beta-lactoglobulin (BLG) compositions by BLG crystallization. The present invention uses at least two different BLG-containing protein feeds, which are mixed to produce a supersaturated protein solution in which BLG crystallizes. The pH of one of the protein feeds must be at least 5.6, and the pH of one of the protein feeds must be at most 5.4.
