Summary: | The invention discloses a method for extracting sulforaphane through step-by-step enzymolysis by combining cellulase with myrosinase. The method is characterized by comprising the following steps: S1, pretreating a sample; s2, cellulase enzymolysis; s3, enzyme deactivation; s4, myrosinase enzymolysis: myrosinase and a catalyst are added into the first enzymatic hydrolysate, and enzymolysis is performed at the temperature of 40-42 DEG C for 8-15 h; s5, extracting sulforaphane: adding an extraction solvent into the enzymatic hydrolysate after enzymolysis in the step S4, applying ultrasonic treatment, and extracting for 30-60 minutes under the condition that the temperature is 40-60 DEG C; s6, filtering; and S7, concentrating: concentrating the filtrate obtained in the step S6 until the extraction solvent is completely volatilized to obtain an oily sulforaphane product.
