Summary:A chopping drum (110) for a cutting and separating apparatus (100) is described, comprising a pressure housing (111) forming an inlet opening (113) on a first end (112) thereof and an outlet opening (115) on a second end (114) thereof, in which a plurality of cutting openings (120) are arranged in a pressure housing portion (116) of the pressure housing (111) and directly through the pressure housing portion (116) from an inner wall (117) to an outer wall (118), wherein the cut opening (120) is oriented such that the bore axis (121) is inclined at an angle ([alpha] O1, [alpha] O2) with respect to the inner wall (117). The present invention addresses the problem of improving the chopping cylinder (110) in a manner such that the cutting performance of the cutting and separating apparatus (100) and the quality of desired food ingredients are significantly improved.
