Summary: | The invention relates to a novel grease prepared by using an enzymatic transesterification technology, which belongs to a grease preparation method, and is prepared by the following steps: heating sheep tail grease in a water bath of 30-60 DEG C to melt into a liquid for later use; the method comprises the following steps: slowly adding linseed oil into sheep tail grease while stirring, adding lipase into the prepared mixture, separating the mixture, and taking upper grease, thereby obtaining the binary mixed novel grease. The novel transesterification grease is obtained by using the Sunide sheep tail grease and the flaxseed oil as raw materials and using lipase to catalyze transesterification of the two raw materials under the condition of no solvent, and trans-fatty acid is not generated in the reaction process. Compared with the raw material Sunitite sheep tail grease, unsaturated fatty acid in the transesterification grease is remarkably increased, and the content of saturated fatty acid is reduced.
