The preparation process of the crispy duck with unique flavor comprises the following steps of: (1) unfreezing a duck and roasting duck feathers; (2) pickling the duck: pickling the duck with brine; (3) carrying out filling treatment: filling the duck cavity of the duck with a filler; (4) scalding the skin of the duck; (5) coating the duck with pulp; (6) air-drying and baking the duck to medium well; (7) vacuum packaging the duck; and (8) preparing finished duck: frying the duck obtained in the step (7) until the duck is cooked. According to the method, the crispy duck is roasted to be medium-well, when the crispy duck needs to be made in batches, the medium-well duck is well-fried, and the made crispy duck is good in taste.
