The invention discloses a preparation method of porous plant particles with scorch aroma. The method comprises the following steps: (1) processing fresh plants till that the water content is 5-10wt%, and then crushing till the particle size of the plant particles is 0.5-2.0 mm; (2) keeping the plant particles obtained in the step (1) at 600-800 DEG C under the condition of air isolation for 0.5-2 seconds; (3) cooling the particles obtained in the step (2) to a room temperature in the absence of air; and (4) crushing the particles obtained in the step (3) into powder with the particle size of 100-180 meshes, and then bonding the powder into particles with the particle size of 20-60 meshes by using a bonding agent, namely the porous plant particles with the scorch aroma.
