Abstract | The invention discloses kudzu vine root powder-plum slices and a preparation method therefor. The kudzu vine root powder-plum slices are prepared from raw materials, i.e., salted plums, white granulated sugar, a green plum juice concentrate, kudzu vine root powder, naranjilla powder, malt syrup, modified starch FS466, soybean oil, seasoning powder I and water. The kudzu vine root powder-plum slices are prepared through procedures such as cleaning demineralization, pulping, starch pre-gelatinization, deodorizing treatment, uniform mixing and seasoning, vacuum defoaming, shaping, vacuum drying,seasoning powder preparing, and peeling breading and slicing, thereby obtaining a finished product. The plum slices prepared by the method disclosed by the invention have the advantages of dual tastesof the kudzu vine root powder and green plums, no astringent taste and long shelf lives.
