Summary:The invention discloses a preparation method of a soy protein isolate-quaternary ammonium salt chitosan microcapsule with a tea polyphenol coating. The method comprises the following steps: mixing calcium chloride and a sodium carbonate solution to generate calcium carbonate particles as a template for microcapsule preparation; a layer-by-layer self-assembly mode is adopted; the preparation methodcomprises the following steps: sequentially adding soybean protein isolate and a quaternary ammonium salt chitosan solution into a calcium carbonate dispersion liquid to obtain a chitosan-soybean protein isolate microcapsule with a multilayer coating structure, centrifugally washing the microcapsule, removing a calcium carbonate template by using an EDTA solution, and adding a tea polyphenol solution for coating to finally obtain the target microcapsule. The microcapsule is used for embedding and in-vitro release of puerarin. Results show that the microcapsule with the tea polyphenol coatinghas a slow release effect
