Summary: | The invention relates to the technical field of food preparation, and particularly discloses dried pomelo peel and a preparation method thereof. The preparation method comprises the following steps: performing a debitterizing step: performing debitterizing on pomelo peels without yellow outer peels by adopting a chemical debitterizing method to obtain debitterized pomelo peels; performing a sugarboiling step: putting the debittered pomelo peels into an aqueous solution containing 8-10% by mass of maltitol, and performing sugar boiling; and performing a drying step: carrying out drying on thepomelo peels subjected to sugar boiling to obtain the dried pomelo peels. The dried pomelo peels prepared by the method are free of bitter taste and have the fresh scent of the pomelo peels; and meanwhile, the dried pomelo peels also have proper crispness.
